Honey, in general, is given an important status in the Islamic world because it is mentioned in the Quran. Any benefits that might be in the honey will be predominantly due to the nectar from which it is made and the health and vigour of the bees making it. The bees make honey out of nectar, but in doing so, they rather accidentally add bits of pollen, enzymes from their digestive system, and so on.
There are many components in honey—almost all of them are sugars. After sugar (fructose, sucrose, glucose, maltose and a host of other oligosaccharides or “short-chained sugars) which make up around 80% or more of the contents, comes water at around 15–17% of honey’s content.
From there you are left with from less than 1%-to a little over 2% that can be other materials. These are made up predominantly of pollen grains and amino acids, a number of organic acids (like malic acid, acetic acid, and related compounds.
Those compounds are what add “brightness” and floral and fruit flavours we may detect in the honey from differing sources. These organic acids and related compounds often come from bacterial and yeast action on the honey while the honey is still in the honey gut of the bee and sometimes in the early stages of honey development in the comb before it is capped (sealed up) by the bees.
Once it has been capped, it is rare that honey undergoes any further bacterial or fungal transformations; there is simply not enough water concentration to allow such activity and then bacteria and fungi are is a state of “stasis” enclosed in endospores.
