Beef or mutton strips – 1 kg
Bihari Kabab Masala – as required / according to pack directions
Yogurt – ½ cup
Raw papaya paste – 2 tablespoons
Fried onion paste – ½ cup
Ginger garlic paste – 2 tablespoons
Mustard oil or cooking oil – 3–4 tablespoons
Lemon juice – 2 tablespoons
Green chilies – 2–3, finely chopped (optional)
Cut the meat into thin strips suitable for Bihari Kabab.
Add Bihari Kabab Masala, yogurt, raw papaya paste, fried onion paste, ginger garlic paste, mustard oil, and lemon juice.
Mix thoroughly so that the marinade coats all the meat evenly.
Cover and marinate for 4–6 hours, or preferably overnight for deeper flavor and tenderness.
Thread the marinated meat onto skewers.
Grill over charcoal or cook on a BBQ until the meat is tender, juicy, and lightly charred.
Alternatively, cook in a grill pan or frying pan over medium heat until fully cooked.
For an authentic smoky flavor, give the cooked kababs a brief charcoal smoke (dhungar) if desired.
Serve hot Bihari Kabab with paratha, naan, mint chutney, sliced onions, lemon wedges, and fresh salad.
For best results, use thinly sliced meat and allow sufficient marination time. Raw papaya helps tenderize the meat, while charcoal grilling gives the kababs their traditional smoky aroma.
Store the masala in a cool, dry place away from direct sunlight and moisture. Keep the pack tightly closed after use.
Use according to taste and pack instructions. Check the final product label for allergen and ingredient information.
