Soya Chunks Recipe

Spicy Soya Chunks Curry, which makes a hearty, high-protein meal.
Key Prep Step (Never Skip)
  1. Boil 1 cup of soya chunks in 3 cups of water with 1 tsp of salt for 5-7 minutes until plump and soft.
  2. Drain and rinse with cold water.
  3. Crucial: Squeeze the chunks tightly between your palms to remove excess water. This allows them to absorb the spices perfectly.
Ingredients
For Marination:
  • 1 cup prepared soya chunks
  • 3 tbsp plain yogurt (curd)
  • \(\frac{1}{2}\) tsp turmeric powder
  • 1 tsp Kashmiri red chili powder (or paprika)
  • 1 tsp ginger-garlic paste
  • Salt to taste
For the Curry Base:
  • 2 tbsp cooking oil (vegetable or mustard)
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp garam masala powder
  • 1 tsp coriander powder
  • Fresh coriander leaves for garnish
Instructions
  1. Marinate: In a bowl, mix the yogurt, turmeric, chili powder, ginger-garlic paste, and salt. Add the squeezed soya chunks and coat well. Let it rest for 15-20 minutes. 
  2. Sauté the Aromatics: Heat oil in a pan on medium heat. Add cumin seeds and let them sizzle. Add chopped onions and cook until golden brown.
  3. Build the Gravy: Stir in the chopped tomatoes, coriander powder, and a pinch of salt. Cook until the tomatoes are soft and the oil starts to separate.
  4. Cook the Soya: Add the marinated soya chunks into the pan and sauté for 5 minutes. Pour in \(\frac{1}{2}\) cup of water (depending on the gravy thickness you want), sprinkle the garam masala, and let it simmer covered for 8-10 minutes on low heat. 
  5. Garnish: Turn off the heat, mix in fresh coriander, and serve hot with chapati, paratha, or rice.
