Made from the ground seed of guar bean, ChiltanPure Guar Gum has 8 times the thickening power as corn starch and is an excellent all-purpose thickener. It is an emulsifier for sauces and dressings, or as a binder and volume enhancer for baked goods. It is a popular ingredient for gluten free scratch baking.
Highly acidic ingredients will lessen the thickening abilities of guar gum.
If using to thicken liquid, it is best to first make slurry of guar gum with a small amount of liquid(oil or other fat is best) before incorporating into the larger batch. This will eliminate clumping.
